对萝卜贮藏期间木质素、纤维素和可溶性糖含量变化及其与糠心指数的关系进行研究。结果表明 ,糠心指数在贮藏后 50 d发生极显著增加 ;木质素含量在贮藏后 3 0 d、纤维素含量在贮藏后 4 0 d发生显著增加 ;可溶性糖含量在贮藏后 3 0 d发生极显著升高 ,而后发生极显著下降。糠心指数的变化与木质素、纤维素的含量变化呈极显著正相关 ,可溶性糖含量与糠心指数的变化呈不显著负相关。由此可得出 ,木质素、纤维素含量的增加是萝卜肉质根贮藏期间糠心现象发生的重要原因。萝卜在贮藏 4 0 d后 ,食用品质发生显著下降
The changes of lignin, cellulose and soluble sugar contents during radish storage and their relationship with the heart rate index were studied. The results showed that the heart rate index increased significantly 50 days after storage. The content of lignin increased significantly on the 30th day after storage, and the content of cellulose increased significantly on the 40th day after storage. Soluble sugar content occurred on the 30th day after storage Significantly increased, followed by a very significant decline.
