孟诜的《食疗本草》以日常生活中食用的米谷、菜蔬、瓜果、动物为主要药用来源,阐述其药理作用、食用方法、炮制过程、治疗效果、服食禁忌、烹饪加工及储存方法,该书的理论和实用价值,对食疗史的发展产生了深远的影响。作者阐述了其两大贡献:一是记载了大量食用本草,二是确立食疗基本原则,并归纳筛选了其常用且具有一定实用价值的食物,进行了现代应用方面的探讨。
