据流行病学调查山东省胃癌死亡率以苍山县为最低,仅3.45/10万,最高的是栖霞县,达40.08/10万,苍山县为栖霞县的1/12。苍山县以种植大蒜著称,当地居民常年以生大蒜佐餐,例如该县神山公社每人每日平均食蒜约20g,栖霞县居民则少食大蒜。胃癌死亡率的高低是否与这一饮食习惯有关值得研究。为此,我们对两县部分居民测定了胃液亚硝酸盐和硝酸盐的含量,以及栖霞县居民食蒜五天后胃液亚硝酸盐和硝酸盐的含量。对山东省医学科学研究所受试者用大蒜匀浆灌胃后,测定其胃液亚硝酸盐及硝酸盐含量的变化。并且测定了两县的井水和粮食中亚硝酸盐及硝酸盐的含量。
