甲醛(formaldehyde)是国际癌症研究局(IARC)正式公布的人类致癌物(A1类)。我国禁止甲醛作为食品添加剂,但是一些不法商贩仍在水产品中非法添加,同时,水产品可以产生内源性甲醛,其主要前体物质是氧化三甲胺(TMAO),可在内源性氧化三甲胺酶和微生物作用下脱甲基生成二甲胺和甲醛,该过程受到温度的影响。为了解济南市市售水产品中甲醛含量的现状,于2012年7—10月在济南市海鲜批发市场及社区菜市场采集鲅鱼、鱿鱼、墨鱼、带鱼、黄花鱼、基围虾、明虾、鲳鱼等19种水产品样品共计103件,并探讨了常见的两种市售淡水活鱼鲤鱼和草鱼中甲醛含量与冰冻时间的关系。取可食用肌肉部分,经前处理后,按照SC/T 3025—2006《水产品中甲醛的测定》
