采用烘干法、总目比色法、原子吸收光谱法和凯氏定氮仪分别测定了僵藕叶片、叶柄、根状茎的干物质、可溶性糖、淀粉、钾、粗蛋白含量变化,并与健藕相比较。结果表明,僵藕藕身干物质、淀粉含量均低于健藕;在新藕形成和膨大期间,僵藕藕身可溶性糖、钾含量有一个激增过程,与健藕的平缓下降趋势完全不同;僵藕叶片、叶柄、根状茎中的钾含量均高于健藕,粗蛋白含量与健藕相近。
The contents of dry matter, soluble sugar, starch, potassium and crude protein in leaves, petioles and rhizomes of Caulis Chinensis were determined by drying method, total colorimetric method, atomic absorption spectrometry and Kjeldahl apparatus. Compared with Jian lotus root. The results showed that dry matter content and starch content of stubborn lotus root lotus were lower than that of Jian lotus root. During the period of formation and enlargement of new lotus root, the content of soluble sugar and potassium in sturcture lotus root lotus root had a sharp increase process, which was completely different from that of Jian lotus root. Potassium content in leaves, petioles and rhizomes of sturgeon lotus root was higher than that of Jian lotus root, and the crude protein content was similar to that of Jian lotus root.
