摘要鸟贡一号(商品名为上农黑籼)引种及其利用课题已于1989年9月通过局级技术鉴定,是上海地区首次种植黑稻籼型类型成功的品种,为了开发利用黑稻,本文就鸟贡一号的米粒外观、碾米品质、蒸煮和食用营养品质进行分析,取得了定量数值。发现乌贡一号的含铁量较高,维生素B_1、B_2,以及蛋白质、赖氨酸含量都明显高于一般白米。为开发利用黑米食品,提供了原料的内含物营养指标和煮食方法的可靠依据,为黑米开辟了广阔的前景。
Abstract Introduction and utilization of Tonggong-1 (Shangnong Heian indica) was appraised by bureau-level technology in September 1989. It is the first successful cultivar of indica type of black rice in Shanghai. In order to develop and utilize black rice This paper analyzed the appearance of rice grain, milling quality, cooking and eating nutritional quality of Ticonone, and obtained the quantitative values. It was found that the content of iron in Ungong No.1 was higher than that in normal rice. The contents of vitamin B 1, B 2, protein and lysine were significantly higher than those of common rice. In order to develop and utilize black rice food, it provides a reliable basis for nutritional indicators of raw materials and cooking methods, opening up a broad prospect for black rice.
