铬、铜和锌是必需微量营养素,但高浓度时对人体健康有害。当今这些重金属在许多工业生产过程中是很重要的,因此而导致其在水、土壤、空气中的水平增高,并进入到食用蔬菜组织之中。西班牙科学家从各种食用蔬菜的各个部分检出铜、铬、锌,食用蔬菜采自西班牙塔拉戈纳省的两个地区(北方工业区和南方农业区,均为Ebro河灌区),共计16种不同种类的蔬菜275份样品。蔬菜分为5组进行分析;
Chromium, copper and zinc are essential micronutrients, but are harmful to human health at high concentrations. Today, these heavy metals are important in many industrial processes, resulting in increased levels of water, soil and air, and into eating vegetable tissue. Spanish scientists detected copper, chromium and zinc from various parts of various edible vegetables taken from two regions of the province of Tarragona in Spain (northern industrial zone and southern agricultural zone, Ebro River), for a total of 16 275 different types of vegetables samples.
