糖苷类物质是烟草潜在香味物质,对卷烟加香具有重要作用。从糖苷的种类、性质和作用出发,综述了烟草品种、部位、调制、加工工艺和生态环境对糖苷类物质的影响,并阐述了糖苷类物质的分析测定方法及其生物合成途径。认为今后应加强研究各因素对烟草中糖苷类物质的影响,着力探寻糖苷类物质在烟草中的应用,为提高卷烟香气品质提供理论依据。
Glycosides are potential tobacco scent substances, flavoring cigarettes has an important role. Based on the types, properties and functions of glycosides, the effects of tobacco varieties, parts, modulations, processing techniques and ecological environment on the glycosides were reviewed. The analytical methods and their biosynthetic pathways of glycosides were also discussed. In the future, we should study the influence of various factors on the glycosides in tobacco, explore the application of glycosides in tobacco and provide a theoretical basis for improving the aroma quality of tobacco.
