神秘果(Synsepalum dulcificum)是用于化学接受体研究的三种植物之一。Inglett等人描述过神秘果的改味特性,并将这种特性归因子一种糖脱。神秘果中的改味物质已分离出来,称为“神秘果素”或“改味脱”。神秘果素虽然本身并不甜,但它却能使酸味变成甜味,因而是研究味觉的一种试验工具。
Synsepalum dulcificum is one of three plants used in the study of chemical receptors. Inglett et al. Describe the taste-modifying properties of the mystic fruit and attribute this property to a sugar-sweetening agent.
