美国农业部专家最近对277种食物中的抗氧化剂含量进行了测量。抗氧化剂是一种对身体有益的化合物。很多水果和蔬菜都富含氧化剂,如维生素E、维生素C和β胡萝卜素(维生素A的一种)以及一些矿物质如硒、锌、铜和锰等。抗氧化剂是阻止氧气不良影响的物质,它是一类能帮助捕获并中和自由基,从而祛除自由基对人体损害的一类物质。
U.S. Department of Agriculture experts recently measured the antioxidant content of 277 foods. Antioxidants are a body-beneficial compound. Many fruits and vegetables are rich in oxidants, such as vitamin E, vitamin C and beta carotene (a vitamin A), and some minerals such as selenium, zinc, copper and manganese. Antioxidants are substances that stop the adverse effects of oxygen. They are a class of substances that help capture and neutralize free radicals and thereby eliminate the damage done to free radicals by humans.
