胚乳腹面不透明的部分称腹白.据日人研究,腹白是由于籽粒充实后期,腹面的胚乳细胞中淀粉充实不完全所致.腹白米属不完全米的一种,品质较完全米差,加工时碎米率高,蛋白质含量一般也低,商品价值不高.有关腹白米的研究结果有过不少报导,但并不一致,对腹白米形成的解释也是多属臆测.我们在1980,1981年的水稻生长季节,着重就腹白米的遗传和环境两方面,对腹白米的形成进行了探讨.
