Modified starches were developed to expand the usefulness of starch for a myriad of industrial applications.We have reported that OSA starch is synthesized by Early Indica Rice Starch in aqueous slurry system.Lipases (EC 3.1.1.3) can catalyze esterification in water-miscible organic solvent and have been used for the esterification of sugars.Using lipase-coupling esterification for OSA starch synthesis in water-miscible organic solvent is expected to improve the esterification efficiency (RE) and DS.
