Yuzu,Citrus junos Sieb.ex Tanaka,has been cultivated in Japan since the 8th century.Nowadays the main producing countries are Japan and Korea,accounting for 20,000 and 15,000 tons,respectively.Yuzu is a kind of sour citrus fruit similar to lemon and lime.Yuzu has a strongly characteristic flavor quite suitable to Japanese cuisine and is used as a seasoning for salads,sauces,seafood,and pickled vegetables as well as a base for juice vinegar.A beverage made of yuzu juice with honey or sugar is also popular.
