In this study,glutathione (GSH) imported by L.lactis ssp.cremoris SKll,or produced by engineered L.lactis ssp.cremoris NZ9000 were observed to protect the cells against cold stress.Upon cold challenges at 4 ℃ and-20 ℃ as well as reduplicate freezing-thawing circles,strain SK11 uptaking GSH and strain NZ9000 containing self-synthesized GSH both exhibited significantly survival predominance compared with their controls without GSH.
