Glucosinolates (GS) are abundant plant secondary metabolites that are found in cruciferous plants.Much attention has been paid to cruciferous brassica vegetable for its rich nutrition and high concentration of bioactive substances.Sulforaphane was one of the degradation products,which had biological property of anti-carcinogenic potential.Chinese cabbage and Baby Chinese cabbage are important species of the Brassica genus.The changes of the composition and content of glucosinolates in Baby Chinese cabbage and Chinese cabbage under different storage and cooking conditions were analyzed by HPLC.
