一、前言采用气调冷藏的方法储存水果,其库房中的重要参数有温度、湿度、风速、O_2含量和 CO_2含量。这些参数直接影响着水果的储存质量、储藏期和储藏干损耗。湿度的作用与其他参数有关,但也有其自身的特点。本文重点讨论湿度对水果储藏的影响及湿度在气调储藏过程中变化的特点。
