Application of ultrafiltration technology in cheese making because of retention of whey protein in curd has led to increasing yield.concenterated milk by UF is used as pre cheese,thus evaluation of chemical and physical factor influence on mass balance state is very important for controlling characteristic and yield of the end product.because of low quality of raw milk and short life of end product it is necessary to study about ways of proper use of this technology.
