  Purpose: The present study was to develop the quantitative prediction of the bitterness-suppressing effect of phosphatidic acid or sweeteners (sucrose or sugar alcohols) on medicines using an artificial taste sensor.Methods: Firstly, in the evaluation of the bitterness suppression at receptor site, phosphatidic acid as commercial bitterness suppression agent was so useful that its effect was evaluated by not only gustatory sensation test and but also bitter-responsive sensor.Results: The taste sensor output was shown to reflect the depressant effect in gustatory sensation.Secondly, we also examined the response characteristics of the sensor responsive to sweetness.The sensor membrane is charged negatively in the presence of sweeteners such as sugar or sugar alcohols, which tend to receive protons from one of the components of the sensor membrane.We used direct or indirect methods to evaluate or predict the bitterness-suppressing effect of sweeteners on quinine or famotidine solutions.Conclusion: As a result, we were able to predict directly the bitterness intensity of the mixed solution.
