Sucrose is known since decades as probably one of the most powerful retarder for Portland cement.The underlying basic mechanism for this retardation remains however poorly studied and hardly explained on a scientific basis.Which process or which phase is affected and what is the nature of the interaction sucrose cement are some of the unanswered questions.
