An allithiamine-enriched garlic complex ingredient (GCI),named as the Bio-Garlic,was made by reacting garlic extract with fermented soybean hypocotyl.Allithiamine content of GCI prepared in this study was found to be 6 times more than that of garlic powder (GP) alone.Therefore,GCI could be an alternative nutritional supplement to someone under the risk of deficiency or malabsorption of thiamine and other nutrients.
