A variety of metabolites altered or produced from fermentation of Cheongkukjang and Kochujang were isolated,and their functional properties in terms of anti-obesity were investigated.Among the metabolites,two saponin groups (i.e.soyasapogenol A and B) and four capsaicinoids (i.e.nordihydrocapsaicin,capsaicin,dihydrocapsaicin and homodihydrocapsaicin) showing anti-obesity activities were isolated from Cheongkukjang and Kochujang,respectively.
